Subversive Malting & Brewing is a genuine farmhouse brewery at the base of the Catskill Mountains. It produces beers using entirely locally sourced ingredients. Committed to native resources and inspired by New York State’s rich offerings, the brewery strives to encapsulate the region’s essence in every brew.
The brewery has quickly grown since opening its doors in December 2018 as a small-scale operation from a quaint barn in Livingston, NY. Within a year, it expanded operations and moved to an old mechanic’s garage in the Village of Catskill, NY, where an onsite taproom welcomed guests in early 2020.
The brewery’s beers are characterized by their simplicity and expressiveness, catering to diverse tastes. Guests can enjoy the outdoor beer garden, which is available Wednesday through Sunday.
Subversive Malting & Brewing strongly believes in the necessity of a flourishing regional grain economy in the 21st century. By managing all malt production in-house, it emphasizes careful raw material selection from start to finish, enabling it to fine-tune recipes through adjustments to its malts. It brews beers based on the offered malts and crafts specific malts tailored to the beers it wishes to produce.
The beer selection is deeply influenced by the malts they create and grains, hops, and other agricultural products sourced from local partners.
