Hillrock Estate Distillery is dedicated to creating the finest hand-crafted spirits. They produce their spirits using their grain, floor malted, and craft distilled in their copper pot still. The spirits are then aged in fine oak and hand-bottled at their estate in the Hudson Valley Highlands.
The distillery is set against the backdrop of the beautifully restored 1806 Georgian house, overlooking rolling barley fields and the Berkshire Mountains. Like their premier spirits, every detail is refined, and no expense is spared. Hillrock is proud to be among the few “field-to-glass” whiskey producers worldwide. They are the first distillery in the USA since before Prohibition to floor malt and hand craft whiskey on site from estate-grown grain.
The commitment to quality reflects the rich history of artisanal distilling in the Hudson Valley. They control every aspect of production, from planting and harvesting heirloom grains to crafting whiskies in copper pot stills, aging in small oak barrels, and hand bottling, allowing them to create the highest quality whiskies that reflect the unique local terroir.

SOLERA AGED BOURBON WHISKEY
Hillrock Solera Aged Bourbon is the first American whiskey to be aged in the centuries-old Solera method used traditionally to create exceptional Sherries, Ports, Madeiras, and Cognacs. Recognized internationally, the award winning whiskey is finished in 20 year old Oloroso Sherry casks which give the Bourbon floral notes layered with fig, roasted walnuts, candied fruit and spicy rye. Solera aging involves a pyramid of barrels where a small portion of whiskey is removed periodically from the lowest tier of barrels and an equal measure of new whiskey is added to the top barrels. No barrel in the Solera is ever emptied, and over time, the older whiskey in the Solera mingles with younger whiskies to create unmatched depth and complexity.
ESTATE SINGLE MALT WHISKEY
Hillrock Single Malt is handcrafted in small batches from naturally grown Hillrock estate barley, which has been traditionally floor malted on-site in the first new malthouse built at a USA distillery since Prohibition. The estate grain is then milled, fermented, small-batch pot distilled, aged and bottled all at their Hudson Valley Estate. The award winning Field-to-Glass® artisanal whiskey exhibits the Estate’s signature terroir of cinnamon and clove, layered with caramel and vanilla. Expressions smoked with imported Speyside Scotland peat exhibit a complex, lingering smokiness with notes of tobacco, leather and campfire.
DOUBLE CASK RYE WHISKEY
Hillrock Double Cask Rye is a unique American whiskey, handcrafted in small batches from rye grain, which has been naturally grown, milled, small batch pot distilled, aged, and bottled by hand all on their Hudson Valley Estate. After aging in new #3 char American oak casks, the award winning Field-to-Glass® whiskey is then aged in #4 char new American oak casks which add layers of caramel and vanilla to complement traditional rye spice. The Double Cask’s deep golden amber color is highlighted by warm and inviting aromas of vanilla and caramel with hints of prune, apricot and rye spice which round out the nose. Initial caramel sweetness on the palate is followed by mint, clove, and cinnamon spices before fading to a caramel, butterscotch conclusion with a long, warm and sweet finish.
