Elsewhere Farm is a small farm in the Catskills region of New York that specializes in growing and selling microgreens. These microgreens are grown using an organic, soil-less mix and harvested soon after they sprout. This means that there is no need for pesticides or fertilization.
The farm sells microgreens and shoots in 5” x 5” containers called flats. They will keep fresh in your home for you to use for over a week.
Microgreens are essentially edible seedlings harvested at the cotyledon (seed leaf) stage or after the first true leaves emerge. Since the cotyledons contain the energy the young plant needs to survive, consuming them provides the same intense nourishment. Microgreens are highly nutritious and often have more healthy compounds than their adult counterparts. They are rich in phytonutrients, Vitamin C, Vitamin K, Beta carotene, and antioxidants.
