Truck’s menu is inspired by the down-home cooking traditions of Northern New Mexico, influenced by Cowboy, Native American, and Mexican cultures. Chef/Owner Nancy Allen Roper, who grew up in New Mexico, shares her love for Southwest cuisine through the menu, which includes tacos, enchiladas, and signature salads made with locally sourced grass-fed beef, sustainably raised pork, and fresh vegetables. The restaurant’s “Power Wagon,” a house margarita made with top quality, 100% agave tequila, fresh-squeezed lime, and all-natural triple sec, is a must-try.
