This exclusive 20-seat restaurant, personally hosted by Damon himself, is a testament to his dedication and passion for his craft.

Over 4-5 hours, Chef/Grower Damon skillfully prepares and presents approximately 14-19 surprise courses of his innovative Native Harvest Cuisine. The dishes are elegantly served on a distinct collection of Villeroy & Boch, Steelite, and Wedgewood china, some of which are custom-made by Damon using native elements found on the property.

Damon’s personal touch is evident in his passionate descriptions of each course. He shares insights into the ingredients, preparation, and the dish’s origins, often with a touch of humor. Some courses offer a single delectable bite, while others feature over twenty tastes to savor, making each moment a personal and valued experience.

Damon operates his restaurant single-handedly and meticulously, tending to the surrounding 12-acre property, which serves as the exclusive source of ingredients for his original Native Harvest Cuisine, incorporating both Native and Cultivated elements.

In addition to crafting an array of homemade aged cheeses, cured meats, flours, vinegar, pressed oils, butter, and bread on-site, Chef/Grower Baehrel prepares and presents each course of his ever-changing multi-course Tasting Menu. This immersive dining experience lasts around 5 hours and is the sole format offered at Damon Baehrel.
